I am sure that with all of the updates and changes to software that we tend to get left behind on how to function with CAD software. So if anyone needs assistance with OnShape questions please feel free to reach out and ask away and just remember that no question is dumb or stupid unless it was designated to be so.
To give a bit of a background on my experience:
I specialize in 3D CAD design mainly in solidworks & inventor but due to a job change I am currently working in OnShape. I feel most comfortable answering any question that might come up to help aid you.

I have little experience with Onshape. As I try to get the most of it, I was looking for the add-in applications, such as simsolid and OneRender which I found great and user-friendly. Could you recommend other add-ins that you find useful?

I apologize that I was not able to respond till today. Now on the subject of add-in's for OnShape. I would have to say it all depends on what your job is / what you want to accomplish. Power Surfacing is probably a good match if you are working with weird and custom shapes for housings / coverings or even product design as well. But the main thing I would probably suggest to add-in would be CADWOLF or Swift Calcs due to the fact that if you're engineering parts and you don't want to have to break out a calculator and remember all of your equations on how to get your answers these two apps will make life plenty easier since it will be integrated to OnShape.

I recently imported an stl file (my first attempt at an import or grabcad) into onshape and it went swimmingly. The part went into a parts studio and I could move it around. It looked great. Then I tried to insert it into the assembly but the assembly didn’t think it existed as a part. I also couldn’t create another sketch in the part studio. It basically turned it into dead space. Some things I noticed that might be clues to the puzzle: The part name was “mesh” which is something I’ve never seen before and the surface was visibly made up of triangles rather than looking smooth like most things in onshape. Should I just give up on it and find a different file to import or is there a way for me to doctor this one to use?

Hi!
When you import a mesh file in the onshape it can not use as a part in the part studio. Its just like pictures you can use as reference and measure. You should install solid files (ie SLDPRT) to use in the part studio.
The only free solution what I found to convert mesh (stl) into solid is the freecad.
