For practice with CATIA or any CAD system, just take measurements off of the real, physical parts. Ball point pen, toaster oven, your desk or chair, etc. would be great assemblies to learn from. Besides working on your CAD skills, try to improve on the design of the machines to develop your engineering skills.
Most of the old books on technical drafting will have good examples of part and assemblies.
