how to emboss and engrave text on any model/component in CATIA ?

Nice and simple tutorial that is easy to follow, but missing the last step.
Once the sketch is drawn up:
To engrave, make a Pocket based on the sketch
To emboss, make a Pad based on the sketch
But also if you want to emboss text first you have to change the letters to elements to make a pad as mentioned above.
To do this make your text in the usual way in a sketch then save the model as a DXF file. Import the new DXF file into your catia model and the text from the DXF file will be lines and curves. Wallop, job done ;)
